Mexican Rice & Honey-Spicy Chicken

This lock-down period  has taught us many things whether to spend the time with our loved ones or pursing a hobby.
This period has surely given us plenty of time to try something exciting everyday.
We all like good food and some easy food to snack around. So, I made this Mexican Rice & Honey-Spicy Chicken. Although there are plenty of blogs mainly focusing on foods, recipes but, I tried it with a little different manner. (I know its not the best but, its something which me and my family love to have).

REQUIREMENTS for HONEY-SPICY CHICKEN~

1. Chicken
2. Salt - 1/4 tsp.
3. Pepper - 1/4 tsp.
4. Honey - 2/4 tbsp. ( add honey as per the sweetness you want).
5. Sugar - 1 tbsp.
6. Soy Sauce - 2 tsp.
7. Chicken Broth
8. Ketchup/ Tomato Puree
9. Oil - 2 tbsp.
10. Garlic - 1

PROCESS TO COOK~

1. Boil the chicken in a cooker and wait for 2-3 whistles.
2. Separate the chicken from the broth.
3. Marinate the boiled chicken with salt and pepper. Cover the chicken for 5 minutes.
4. Take a bowl and add 1 tbsp sugar, 2/4 tbsp honey, add 2 tsp soy sauce.
5. Mix well and add the chicken broth (2 cups).
6. In a pan add 2 tbsp. of oil.
7. Add the chicken pieces gently into the warm oil and cook for some time.
8. Pour the prepared stock into the pan and stir it for 2 minutes.
9. Add Ketchup/ Tomato Puree for taste and color.
10. And finally, add garlic paste into the chicken.
11. Close the lid and wait for 10-15 minutes.
12. Garnish the chicken with coriander leaves. And it is ready to eat!



REQUIREMENTS for MEXICAN RICE~

1. Onion - 1
2. Carrot - 1
3. Tomato - 2
4. Ginger - 1
5. Garlic - 3
6. Tomato Puree/ Tomato Sauce - 1/4 cup.
7. White Rice - 1 1/2 cups.
8. Salt - 1/4 tsp.
9. Oil - 1/4 cup.
10. Broth/Water - 3 1/4 cups.

PROCESS TO COOK~

1. In a pan take some oil and let it heat for 10 seconds.
2. Add some rice and cook till it gets golden brown for about 5 minutes.
3. After the rice turns into golden brown add finely chopped onions into the pan.
4. Add chopped tomatoes and tomato puree/tomato sauce to make it look red-ish.
5. Add chopped carrots and peas into the pan.
6. Stir all the vegetables and rice firmly for 1 minute.
7. Add ginger and garlic paste for flavor.
8. Pour water of about 3 1/4 cups or we can use the broth from the chicken.
9. Sprinkle salt and black pepper to taste. ( 1/4 tsp)
10. Close the lid and simmer it for 10 minutes.
12. Voila! The Mexican Rice is ready to glup down.

He started to whip his face with his sleeve and looked towards me with guilt as if, he was asking me to forgive him. I already knew something was not going right after the man left.
